Chicken soup can be classified as a basic soup. It is a real delicacy from time immemorial. Transparent, yellowish, it invigorates and gives strength. It is not for nothing that they even prepare chicken broth for the patient. Although considered one of the simplest soups, making real, quality chicken soup is not easy. You need to be patient and follow the technology exactly.
Today we will cook a real chicken soup without potatoes, which will take us two whole days to prepare! But it's worth it! Intense, completely non-greasy, transparent! He is perfect! You can then use the broth from this recipe as a basis in any other recipes and even prepare it for future use. Simply omit the steps with the noodles and meat in the broth, pour into portion molds and place in the freezer. You can store broth in the freezer for up to 6 months, and the scope of use is extensive!

Moving on to making our Chicken Noodle Soup without adding potatoes. Next, a step by step recipe with a photo.
Step 1
Peel the carrots and cut into large pieces.

Peel the onion and cut into quarters.

Now take a large 5 liter pot. Put in it the chicken pieces, chopped onions and carrots, as well as salt, bay leaves, allspice.
Step 4
Pour water into a saucepan and bring to a boil, stirring frequently. Then reduce heat to low and simmer for an hour and a half at a low boil, periodically skimming off the foam.
Step 5
Strain the broth through a fine sieve into a smaller saucepan (a 3-liter one will do). Let it cool down properly and then refrigerate it overnight.
Disassemble the chicken meat. When the chicken pieces are cool enough to handle, remove all bones, skins and fat and cut the fibers into cubes. Put the meat in the refrigerator overnight.
Step 6
The next day, carefully remove the stock from the refrigerator. Do not rush, it is important for us that the broth does not shake. Remove the frozen fat from the surface of the chilled broth and very carefully, so as not to disturb the sediment at the bottom, pour the broth into another saucepan. Try not to let the sediment fall back into the broth, but stay in the first saucepan. This will allow our soup to be light and clear.
If you are preparing just broth, and not soup, then it is at this stage that you should stop and pour it into freezing molds, or add it to the dish for which you needed it.
Step 7
We continue to prepare our chicken soup. Bring the broth to a boil and let it simmer for 10 minutes to make it more concentrated. Gently add the chicken pieces to the broth.
Step 8
Now stir in the egg noodles. Cook, stirring constantly, until the noodles are tender (see the noodle packaging for cooking times). Season with salt and spices to taste. You can also add a pinch of finely chopped dill at this stage.
Serving
Serve the chicken soup hot in deep portioned bowls. Garnish with a sprig of parsley or dill. Be sure to place slices of cereal bread nearby for a more satisfying meal.
