Step-by-step instruction
Making a delicious, aromatic and low-calorie soup with beans and mushrooms at home is very easy. The dish can be cooked both in vegetable broth (as in the recipe) and in meat. You can also choose any mushrooms: white, chanterelles, mushrooms (be guided by your taste). We've prepared a quick lean recipe for you that the whole family will love.
Step 1
If using dried mushrooms as in the recipe, then they should be prepared. First, pour hot water over the mushrooms and leave to soak. Usually 30 minutes are enough. Soak the dried product beforehand.
Advice! Take care of the broth in which you will cook the soup in advance to save cooking time.

Step 2
When the required amount of time has passed, you can drain the water from the mushrooms. Do this through cheesecloth or a sieve into a separate container, as the mushroom water will come in handy for the broth a little later.

Now you need to finely chop the mushrooms and transfer to a bowl.

Step 4
It's time to prepare the onions. It must be peeled off, washed under running water and cut into small cubes. Next, take a frying pan, pour olive oil into it and put on fire. When the container is warm, send the onion to fry. Saute the onions over low heat to prevent them from burning.

Step 5
When the vegetable turns transparent, add the wheat flour.

Stir the ingredients well in a skillet and fry for another 3-5 minutes. If it burns, you can add olive oil.
Advice! If you want the soup to have a creamy taste, then sauté the onions in butter.

Now take a large saucepan and pour the mushroom water into it first and then the vegetable broth. Season with salt and pepper to taste and place on the stove. Add dried mushrooms and simmer broth over medium heat until boiling. While you wait, you can open the can of canned red beans.

When the soup boils, add the red canned beans along with the juice to the saucepan. Cook the soup for another 15 minutes.

When the broth is slightly boiled, add a sprig of rosemary or thyme. Try it with salt. If not enough, then add some salt. If there are fresh herbs at home, then add them to the soup. You can also add potatoes or other vegetables to your taste. But keep in mind that then the calorie content of the dish will be slightly different.
