Curd cheese with cucumber is a very tasty and beautiful appetizer prepared in the form of rolls (rolls). Feta cheese is used for the filling, but you can use any other soft cream cheese. Rolls are formed with the help of parsley sprigs, which makes the dish exquisite and very original.
Note: cucumbers must be selected oblong and thin, without a lot of seeds and wateriness.

Step 1
The first stage begins with preparing the base for the rolls. Take cucumbers, wash them, and cut off the dense bases on both sides. Use a knife or a special peeler to cut the skin and then cut the cucumber into long slices. The number of strips to be made depends on the volume of the filling.

Step 2
Choose the most beautiful and even stripes of about the same size and place on a paper towel to absorb excess liquid.

To prepare the filling, take a deep bowl, lay out the soft curd cheese and mash the product well with a fork.

Take the parsley, wash, separate the leaves from the base (do not discard the stem), shake off excess moisture and finely chop the herbs. Place the olives in a colander to allow the liquid to drain. Take a red bell pepper, cut it in half and peel it, and then chop the vegetable into small cubes. Take the olives out of the colander (they should have dried by this time), and then chop the fruits finely.

Step 5
Transfer the chopped greens, peppers (save some for presentation) and olives to a bowl of mashed cheese. Pepper, add a little lemon juice and salt if the cheese is not salty. Mix thoroughly so that the colored grains of the filling are evenly distributed over the curd.

In order to fix the roll, you need to take a parsley stalk (just a thin twig without leaves). Place the roll on a board and wrap it with a stem of greenery in the middle, like a thread, and then tie it in two knots so that it does not unwind.
