Step 1

The preparation of the minced mashed potato casserole begins with the preparation of the frying. To do this, peel the onions. Wash and pat dry, then chop finely. Peel the carrots, wash and pat dry. Grate the vegetable on a fine to medium grater. Send the frying pan with a little vegetable oil to the stove and let it glow. After that, you need to lay out the carrots and onions. Saute the vegetables until light golden brown. Stir the stir-fry regularly to keep it from burning.

Step 2

Now you need to thoroughly wash the eggplant. Cut off the ends. If you are using a young vegetable, you do not need to peel it.
