Turkey baked with vegetables is a simple and delicious dish, suitable for a healthy diet and which will definitely please all family members. To make a casserole at home, you must give preference to the breast or fillet of a turkey, however, an option using a poultry thigh or drumstick is possible. Only in the second case it is necessary to take into account that the calorie content of the dish will increase. Sour cream should be bought with a minimum fat content. You can choose any mushrooms, just keep in mind that you need to take the type of product that can be used in cooking without additional heat treatment. Step 1
Start by preparing the meat. Wash the turkey breast, cut off all the fatty clumps and cook in salted water until almost cooked. While the meat is cooking, make the casserole sauce. To do this, take a deep bowl, pour half of the sour cream and add olive oil. Wash herbs such as parsley, chop into small slices and add half to the sauce. Season with salt and pepper and mix well.

Step 2
Open the canned corn, discard half the contents of the jar in a colander. Rinse the mushrooms, cut off the firm base and cut the product into slices (including the stem). Wash the bell peppers, peel and cut into medium sized cubes. Separate the broccoli florets from the dense stem and cut the vegetable into small pieces. Grate hard cheese on a fine grater. When the turkey fillet is cooked, remove from the water, let cool slightly and cut into medium cubes, about the same size as bell pepper slices.

Step 3
Take the rest of the sour cream and pour it into a deep bowl, break the eggs, add the chopped herbs and a couple of handfuls of grated cheese. Whisk well using a whisk, mixer or a simple fork (you do not need to beat until foamy, but the consistency should become uniform). Prepare a baking dish, brush the bottom and sides with olive oil and add the sliced meat. Pour the prepared egg and sour cream sauce on top.

With the second layer of the casserole, evenly spread the slices of fresh (you can take canned) mushrooms.

Lay the broccoli inflorescences in the next layer, and sprinkle with canned corn on top, from which all excess liquid will drain by that time.

Put the red bell pepper and pour over all the ingredients in the tin with a couple tablespoons of sour cream sauce, and then sprinkle everything with yellow bell pepper.

Pour the remaining sauce with herbs (it is better to do this with a spoon, then it will turn out more evenly), and then sprinkle the top with grated cheese.

Place the dish in an oven preheated to 180 degrees and bake for about 25-30 minutes. The casserole should set and the cheese should turn brown. Check periodically to make sure the cheese doesn't start to burn.
If you see that the inside of the casserole is still wet, and the cheese is already too fried, then cover the mold with foil and keep in the oven until the dish is fully cooked.
