Step-by-step instruction
Oven-baked pork roll with filling is a very tasty dish that is not ashamed to be served at the festive table. We recommend taking a loin or neck from pork, as this part of the meat is the most tender and juicy. The roll is easy to make at home if you follow the recommendations from a simple step-by-step recipe from the photo below.
The filling in the meatloaf is not only an apple with cranberries and walnuts, but also a dietary chicken fillet, which makes the dish taste lighter, and the roll itself is less nutritious.
On top, for decoration, a special glaze is made, prepared on the basis of orange jam (confiture), but instead of it, you can take thick jam.
Step 1
The first step is to give the meat the desired shape. Take a loin and a sharp knife and place the pork on a cutting board. Keeping the knife parallel to the work surface, start making an incision along the meat, rolling it along the way to make a long, solid piece.

Step 2
Take cling film, measure out the required amount and cover the pork. Use a hammer to beat the meat well so that later it is better saturated with spices and becomes more tender.

Step 3
Measure out the amount of butter indicated in the ingredients and melt it, but in no case bring it to a boil so that the product does not separate. Using a silicone brush, spread the melted butter evenly over the pork chop (you don't have to use all the butter, measure out as needed). Season with salt and pepper to taste.

Step 4
Chop the walnuts, you can do this with a knife or by beating the product with a hammer. Wash the cranberries, pat dry on a paper kitchen towel. Spread the chopped nuts evenly on top of the pork, top with cranberries and sprinkle with spices, namely thyme and rosemary. You can also grind the spices beforehand to make the flavor more pronounced.

Step 5
Take an apple, wash it under running water and use a core knife to remove the seeds, and then cut the fruit into thin slices. If the necessary tool is not available, then first cut the apple into slices, and then carefully cut the cores from each piece separately. Spread slices evenly on top of the meat piece.

Step 6
Prepare the chicken fillet. Wash the meat, trim off the film and fatty layers, if any. Wipe the fillet with a little salt or pepper if you want to get a spicy roll, otherwise do not season the meat with any spices. Place a whole chicken fillet in the center of the piece.

Step 7
The next stage is shaping, for which you need a dense thread. First, wrap one edge of the meat on the fillet, and after the second, squeeze it more tightly (so that there are no voids inside) and wrap it with strong culinary (or ordinary) thread. The thread should be evenly distributed over the entire length of the roll.

Step 8
Turn on the oven to preheat to 180 degrees and take out the baking dish. Gently transfer the roll to the center of the mold, using a silicone brush, brush the top and edges with melted butter (which was left from the previous step). Cover the tin with foil and bake in the oven for 45 minutes.

Step 9
While the meat is baking, you need to do the icing. To do this, take a saucepan, put half a glass of orange jam, add a teaspoon of mustard, pass the cloves of garlic through a press, stir. Squeeze the juice out of half an orange and add one tablespoon of liquid to a saucepan. Season with salt and pepper to taste, place the saucepan over low heat. Stir occasionally until the jam dissolves and the liquid begins to boil, then remove from the stove.

Step 10
After the allotted amount of time, remove the roll from the oven, remove the foil. Using a silicone brush or a regular teaspoon, apply the glaze evenly to the top of the meat. Cover the tin with foil and return to the oven for another half hour.

Step 11
After 30 minutes, remove the mold and leave to stand at room temperature (without removing the foil) for 10 minutes. Then remove the foil and carefully cut, and then remove the thread.
