Cucumber soup with vegetable broth is a vitamin dish that can be safely eaten on a diet. In addition, the cool cream soup is great for refreshing on hot days and can be an alternative to okroshka. The taste of the dish vaguely resembles tartar sauce, therefore, the soup is especially delicious with seafood, for example, with shrimps. We have prepared for you a simple and quick recipe with step by step photos.
Step 1
First you need to prepare all the ingredients. This recipe uses vegetable broth, as it has less calories than meat broth. It should be cooked in advance so that it cools. Rinse the cucumbers under running water and pat dry with a paper towel. Next, cut the vegetable in half and remove the middle with the seeds.
Advice! If the skin of the cucumber is very tough, then it is better to peel the vegetable so that the dish is smooth.
Cut the cucumber peeled from seeds into small pieces. After that, wash the lemon and grate the zest with a fine grater. Wash the dill and green onions and cut them into small pieces.

Step 2
Now that all the products have been prepared, you can start making the soup. Take a food processor and put sliced cucumber slices, lemon zest and herbs into it. Now add 100 grams of sour cream. You can take fat-free sour cream or, conversely, a little fatter - focus on your taste preferences. Grind the food in a food processor until puree: the mass should be fairly homogeneous.

Step 3
Vegetable broth must be added to the finished cucumber mass. The ingredients say 150-200 ml of liquid, but you can add more or less. You should also build on the number of cucumbers that are used to make the soup. Season with salt and pepper to taste and add your favorite spices. The finished soup can be placed in the refrigerator to cool. In the meantime, you can start cooking shrimp, which will perfectly emphasize the fresh taste of the soup.

Step 4
Take a small bowl and mix the spices with which you will season the shrimp. If you don't know which one to choose, you can take ready-made seafood dressings. Or you can mix ground paprika, turmeric, Provencal herbs - and you get an excellent mixture. If you like more savory tastes, then add red ground pepper.

Step 5
Now you need to mash and peel the shrimp. First remove the shell, then slice the shrimp lengthwise and remove the esophagus. If this is not done, the product will taste bitter.

Transfer the peeled shrimp to a deep plate and sprinkle with the prepared spice mixture. Also add some salt.

Take a frying pan, pour olive oil into it and put it on the stove. When the pan is warm, you can lay out the shrimp and fry. This process will not take much time, usually 2-3 minutes on each side is enough.

Remove the soup from the fridge and serve it into portioned bowls. You can sprinkle the cold homemade soup with fresh herbs and drizzle with lemon juice. Serve shrimp cucumber soup to the table. Enjoy your meal!
