Step-by-step recipe for rainbow salad

Step-by-step instruction

Puff vegetable salad "Rainbow" with the addition of chicken breast is a delicious dish, which includes carrots, purple onions, arugula, cherry tomatoes and a juicy apple. The salad is dressed with an unusual dressing made on the basis of natural (home or commercial) yogurt with the addition of avocado and lemon juice.

The dish is not only tasty, but also very beautiful. It can be served on holidays such as birthday or Easter, or eaten on any weekday. Making a classic salad with meat at home is easy if you use the simple step-by-step recipe described below with a photo.

Step 1

The first step is to prepare the chicken fillet. Take the meat, rinse it under running water, trim the veins and fat layers. Chicken can be cooked in two ways: boil it in salted water or bake it in the oven in foil. Then, when the fillet has cooled, it must be cut into small slices about 1 centimeter in thickness.

In order to make the fillet more juicy, it is necessary to leave the meat to cool in the broth or in a closed foil.

Step 2

Wash the apple, cut the fruit in half, remove the core and cut half of the fruit into thin slices. Peel the onion from the husk, rinse under running water and cut the vegetable into the same slices as the apple. Wash the carrots, peel and grate on a coarse grater. Wash the cherry tomatoes, cut in half and cut out the firm base of the stem.

Step 3

Now you need to make the salad dressing. To do this, you need to take a blender and put in it the amount of natural yogurt indicated in the ingredients, peeled and chopped avocados, and squeeze the juice from half a lemon (make sure that the seeds do not fall). Grind the contents until smooth.

Step 4

To form a flaky salad, you need to take a container with high (preferably transparent) walls. Banks are ideal for the travel option. Place the dressing on the bottom of the dish.

Step 5

Put chopped purple onions on top of the dressing. The specified amount of products is enough for 2 servings, and therefore, divide all the ingredients equally.

Step 6

If you are making a salad in order to take it somewhere with you, then in the future you do not need to coat the layers with dressing, otherwise each layer needs to be greased. Place yellow apple slices and cherry tomato halves on top of the onion.

Step 7

Wash the arugula, shave off excess liquid, remove damaged parts from the base of the leaf. Pick up the herbs with your hands or lay out the next layer as a whole, and then sprinkle with grated carrots on top.

Step 8

Add another layer of arugula and finish with the chopped chicken fillet. If there is too much salad, and it already goes beyond the walls of the container, then you can tamp it slightly, but not too much so that the tomatoes do not burst.
