It takes a lot of time to cook a whole oven-baked turkey. But the result is worth the wait. The main thing is to properly prepare the main product. The turkey must be marinated in a saline solution, then after baking it will be soft and juicy. Follow the step-by-step photo recipe.
Step 1
First you need to prepare the product. Wash the carcass, if necessary, then gut. Rinse the bird under running water and dry well with a paper towel so that no excess moisture remains.

Step 2
Now you need to prepare the brine. To do this, take a large container (it should fit the whole turkey). Pour 1 liter of boiling water into a saucepan. Add salt, sugar, bay leaf, mustard beans, cloves, allspice peas and a sprig of rosemary in the proportions indicated in the list of ingredients. Take a few sprigs of parsley, wash under running water, dry, chop and also send them to a saline solution. Place the carcass in a container and cover with a lid. Place the pot in the refrigerator for 2 days.
Important! It will be good if the liquid completely covers the turkey. If the carcass is very large, then increase the amount of ingredients for the solution.

Step 3
After two days, the turkey can be removed from the marinade. It must be washed well under running water to get rid of the remaining solution. Tie the legs of the turkey with thread to keep them from falling apart during baking. Take an orange, wash it, and cut it in half. Cut one half into slices and place inside the turkey. And squeeze the juice from the rest of the orange and brush the whole carcass with it. Place the turkey in a convenient container, sprinkle with rosemary and place in the oven. Since the bird has been marinated for a long time, you can do without foil and baking sleeves. The turkey will still be soft and juicy.

Step 4
How much to bake a bird in the oven? Cooking times are usually calculated by weight: 30 minutes per kilogram. During the baking process, you should adhere to a certain temperature regime. For the first half hour, the carcass is baked at maximum power (ideally 240 degrees). After that, the fire is reduced to 190 degrees, and in this temperature mode the bird is cooked for another 3-4 hours. You can check the readiness of the bird with a wooden skewer. When piercing, clear juice should flow.
