Quinoa with chicken, spinach and vegetables is a complete lunch with a side dish that doesn't harm your figure in the least. The dish turns out to be satisfying, but at the same time healthy, since only olive oil is used for frying. Quinoa has been considered the "queen" of cereals for a very long time, as it contains a lot of nutrients, such as magnesium, iron and zinc. The product also contains a large amount of B vitamins. But the main advantage of quinoa is that it is gluten-free, so almost everyone can eat cereals. To prepare a delicious and complete meal for the whole family at home, you need to spend very little time.
Step 1
Soak the quinoa in cold water before cooking. The groats are enough for 20 minutes, after that the water can be drained, rinsed and filled with water (in a ratio of 1: 2). Place the quinoa on the stove and turn on a small fire. Season with salt to taste. The finished porridge will increase in volume and be crumbly.

Step 2
While the groats are cooking, you can prepare the chicken fillet. The meat must be washed under running water, and then blotted with a paper towel so that excess moisture does not remain. Place a large skillet on the stove with some olive oil. When the pan is warm, place the whole chicken fillet in it. Season with salt and pepper, then sprinkle with lemon juice.
Advice! Before frying, the chicken fillet can be cut into small wedges. But meat that has been fried whole is much juicier.

Leave the fillets for a while and take care of the tomatoes. Wash the cherry under running water and place on a baking sheet lined with foil. Place the container in the oven for 15 minutes. Baked tomatoes will perfectly emphasize the taste of the dish.
