Vegetable casserole is a simple yet tasty and healthy dietary meal that is suitable for both adults and children. Cooking a casserole without meat and eggs in the oven according to the recipe described below with step-by-step photos is not at all difficult. The dish can be included in the diet for people who are on a diet or eat a healthy diet (PP).
It is recommended to use natural yoghurt for dressing the casserole without any food additives or flavorings. If not, you can purchase low-fat sour cream and dilute it a little with purified water.
Step 1
Go ahead and prepare the dressing. To do this, wash the greens, shave off excess moisture and cut the parsley into small pieces, after removing the dense stems. Pour natural yogurt or sour cream (diluted with water in a ratio of 2 to 1, respectively) into a deep bowl, salt, add any spices of your choice and chopped herbs. Mix thoroughly. Turn the oven to preheat to 180 degrees.

Step 2
Remove the canned corn from the jar and discard in a colander. Rinse bell peppers, mushrooms and broccoli thoroughly under running water. Cut off the top from the peppers and peel the middle from the seeds, divide the broccoli into inflorescences, and cut off the dense base and damaged pieces of skin from the mushrooms, if any. Cut the pepper into large pieces, the mushrooms together with the leg - slices. Grate the hard cheese on the shallow side of the grater.

Step 3
Take a baking dish and use a silicone brush to lightly brush the bottom and sides with vegetable oil. Place the mushrooms and broccoli in the first layer, lightly pour the sauce. Then add the drained corn and chopped peppers.

Step 4
Pour the remaining sauce over the ingredients so that all the vegetables are covered in the liquid. Place the baking sheet in a preheated oven for 20 minutes.

After the specified time has elapsed, remove the form on the work surface, put an even layer of grated cheese on top and return the dish to bake for another 5-10 minutes (until tender).
