Potato Salad with Onions and Bell Peppers is a variation of the classic German salad prepared with a natural yogurt or sour cream dressing with a low fat content and a little vegetable oil. To make a dish at home, you need to purchase young medium-sized potatoes, which will be cooked as a whole. The vegetable salad can be served cold or warm. In the first case, the potatoes can be boiled in advance, and in the second, cook immediately before the formation of the salad.
The calorie content of the dish prepared according to this recipe with the photo is low, but it is better to use it in the morning.
Step 1
Rinse young potatoes thoroughly under running water so that no dirt remains on the skin. Pour cold water over vegetables and cook in their skins until tender. Then drain the hot water and add cold water to cool the potatoes faster. Drain the water and spread the vegetables on a flat surface to dry the skins. Cut the potatoes in half, as in the photo, if the roots are small, and into four parts, if large. Transfer the potatoes to a deep bowl and add a little olive oil.

Step 2
Wash the bell peppers, cut in half, peel and remove the tail. Cut vegetables into medium sized cubes. Peel the onions, rinse the fruit under running water and chop finely. Add salt and natural yogurt (or sour cream) to the potatoes in a container, mix with a spoon so that the potatoes are chopped. Add chopped vegetables to the preparation.

Mix all the ingredients thoroughly, add a teaspoon of dried herbs and stir again. Try and add salt or add any spices as desired. If you want to serve the salad cold, place the bowl in the refrigerator for about 30-40 minutes to steep.
