Step-by-step instruction

Tarator is a cold soup of Bulgarian cuisine, which is prepared on the basis of sour milk, low-fat and unsweetened drinking yoghurt or low-fat kefir. The classic step-by-step recipe uses fresh cucumber, herbs, salt and spices to taste, plus garlic and walnuts. For fat content, vegetable oil is added, preferably olive oil. The soup can be served in a plate or glass, it is also possible to serve the dish with ice, but in this case, you do not need to dilute the dairy product with water during the formation of the portion. To prepare a dish, you need to purchase all of the above products, open a step-by-step photo recipe and set aside 10-15 minutes of free time.

Step 1

Take a fresh cucumber, rinse under cold water and use a vegetable peeler or knife to cut the skin. Cut the vegetable into small squares of about the same size. Make sure to taste the cucumber before slicing it so that it doesn't taste bitter or it will ruin the taste of the soup.

Step 2

Rinse the dill thoroughly, shave off excess moisture, remove dense stems and cut the greens into small pieces.

Step 3

Peel 3 garlic cloves, cut the teeth in half and remove the greenish or white stem. Then cut the garlic into small pieces. 1 clove is added to one serving, but no more, otherwise the dish will turn out to be too spicy.

Step 4

Take walnuts and finely chop them with a sharp knife. You can also grind the nuts in a mortar, but do not grind them to the state of flour, whole pieces should be felt.

Step 5

In a deep bowl, place one chopped cucumber, one third of the dill, one minced clove of garlic, and a portion of chopped walnuts. Season with salt, add other spices as desired and a little olive oil, mix thoroughly. Pour sour milk or low-fat kefir over about half a bowl, stir and dilute with purified water to slightly dilute the concentrated milky taste.
