Tarator is a cold soup of Bulgarian cuisine, which is prepared on the basis of sour milk, low-fat and unsweetened drinking yoghurt or low-fat kefir. Step 1
Take a fresh cucumber, rinse under cold water and use a vegetable peeler or knife to cut the skin. Cut the vegetable into small squares of about the same size. Make sure to taste the cucumber before slicing it so that it doesn't taste bitter or it will ruin the taste of the soup.
