Step 1
Before boiling the quinoa, it is best to add cool water and let sit for 20 minutes. After that, the water must be drained, and the cereals must be rinsed under running water. Transfer the quinoa to a container and cover with water in a 1: 2 ratio, respectively. Season with a little salt and place the pot on the stove over medium heat. While the grits are cooking, prepare the spinach. It should be washed under running water and chopped finely, then added to the quinoa saucepan. When the porridge is ready, turn off the heat and set the pot aside for a while.

Now take a baking dish, line it with parchment and brush a little with olive oil. Wash the tomatoes and cut off the tops; remove all the pulp.
