Cooking process

Wash the vegetables thoroughly under running water and then peel.

Chop zucchini, peppers, celery and carrots. I did it with a food processor. Keep in mind that the smaller or thinner the pieces are, the faster the dish will cook and the more the vegetables are saturated with each other's juices. But at the same time it is not worth grinding too much so that the vegetables do not lose their structure. Maintain balance.

Chop onion and garlic finely.

Preheat a deep skillet over high heat. Drop a drop of vegetable oil. If you are using a good non-stick skillet, you can do without oil. Place the chopped onion and garlic in a skillet and sauté until lightly golden brown. Then add all the other vegetables. Fry with constant stirring for 5 minutes.
