Vegetable stew with zucchini, beans and paprika

One of the largest culinary sections is the stew. Stew of various vegetables is rightfully considered the most popular, but at the same time, a simple dish. While it is more common to make a vegetable stew with zucchini, in fact, you can take any vegetables, chop them arbitrarily and simmer in a large saucepan or skillet. At the same time, it is important that all products retain their shape and texture as much as possible, and do not turn into a homogeneous puree.

In addition, the most incredible experiments are allowed in the preparation of vegetable stew. You can only stew vegetables, or you can add meat, minced meat, mushrooms and other products to them. It all depends on what you have in your refrigerator today.

You can also safely use a slow cooker when cooking vegetable stew. The multicooker is simply created for dishes that require slow and even simmering. Vegetable stew in a multicooker turns out to be especially tender and tasty.

Cooking process

Our recipe today includes not only the standard vegetable stews zucchini, carrots and peppers, but also aromatic celery stalk and hearty white beans. We are sure that you will like it, and our step-by-step recipe with a photo will make the cooking process easier for you.

Step 1

Wash the vegetables thoroughly under running water and then peel.

Step 2

Chop zucchini, peppers, celery and carrots. I did it with a food processor. Keep in mind that the smaller or thinner the pieces are, the faster the dish will cook and the more the vegetables are saturated with each other's juices. But at the same time it is not worth grinding too much so that the vegetables do not lose their structure. Maintain balance.

Step 3

Chop onion and garlic finely.

Step 4

Preheat a deep skillet over high heat. Drop a drop of vegetable oil. If you are using a good non-stick skillet, you can do without oil. Place the chopped onion and garlic in a skillet and sauté until lightly golden brown. Then add all the other vegetables. Fry with constant stirring for 5 minutes.

Step 5

Add tomato paste, water and sugar. Do not neglect sugar, in dishes that use tomatoes, ketchup or tomato paste, it is a must. Sugar removes the acidity of tomatoes and makes the taste softer.

Stir well, cover and simmer over low heat for 10 minutes, stirring occasionally.

Step 6

Add beans in tomato sauce to our vegetable stew. Add some more water if necessary. Add your favorite spices such as basil, suneli hops or pepper. Season with salt and mix well.

Step 7

Simmer, covered, until the vegetables soften (about 15 minutes), stirring occasionally and adding water if necessary. Cooking time depends on the type of vegetables and the size of the pieces.

Serving

Hot vegetable stew is laid out on portioned plates or bowls, garnished with herbs and served to the table. Vegetable stew can serve as a stand-alone dish or as an addition to meat, fish or poultry dishes. It is also very tasty to serve vegetable stew with boiled potatoes, rice or bulgur.
